Pepped Up Stuffed Peppers with meatballs. Enjoy another home cooked healthy meal from Rose’ Kitchen!
3 lbs -80% fat free ground beef
5 med to lg green peppers
3 tbsp. garlic pepper
2 heaping tbsp. low sodium soy sauce
1 heaping tbsp spicey brown mustard
3-4 lg eggs
1 lg onion chopped
1 1/2-2 cups Italian style bread crumbs
1 can-26 oz-pasta sauce w/ mushrooms divided
Core, clean & rinse green peppers
Pat dry & place in a deep oven proof casserole dish.
Combine ground beef, garlic pepper, soy sauce, spicy brown mustard, onions, eggs and 1/1/2 cups bread crumbs. Mix well.
Test a small meatball size dollop to make sure mixture holds together.
Stuff peppers fully
Make remaining mixture into meatballs and place them in an oven proof casserole dish.
Pour 1/2 can of pasta sauce over tops of filled peppers
Pour remaining 1/2 can over meatballs.
Bake in a 350 degree oven for 1-1/2 to 2 hrs making sure meat in peppers is well cooked.
